The production of this vinegar has its origin in the old VIDES wineries that functioned as warehousemen in the purest artisan and traditional style.
From its origin, this vinegar progressively acquires increasingly darker tones, first amber and, over time, mahogany. On the nose it has a powerful aroma loaded with hints of vanilla, dried fruit and pickled wood. On the palate, it is soft and fruity, with an exquisite and penetrating acid flavour.
Ideal to combine with salad with anchovies, or tuna tartare. Exceptional with all Asian cuisine due to its spicy aromatic contribution.
