The production of this vinegar has its origin in the old VIDES wineries that functioned as warehousemen in the purest artisan and traditional style.
From its origin, this vinegar progressively acquires increasingly darker tones, first amber and, over time, mahogany. On the nose it has a powerful aroma loaded with hints of vanilla, raisined fruits typical of the Pedro Ximenez grape, and envinada wood. On the palate, it is soft and fruity, with an exquisite and penetrating flavor.
Ideal to combine with salad with anchovies, or tuna tartare and is exceptional with all Asian cuisine that is enhanced by its spicy aromatic contribution and sweet and sour touches.
