Description
A highly complex wine that combines the aromatic delicacy of Amontillados and the complexity on the palate of Olorosos. This wine is made from extremely fine Palomino musts, and is initially fortified at 15% vol. and identified with a palo (stick) or oblique line. At the end of the sobretabla (the wine from the latest harvest) phase, the verification by our wine expert of the existence of certain very specific characteristics in some of the casks in which the veil of flor has been preserved, will determine the classification of the wine as a potential Palo Cortado (which is marked on the casks with a horizontal stripe across the original palo (stick)). The wine is fortified again above 17% vol., thus leading to a process of oxidative aging.
It has a very bright old gold-amber colour. Very pungent, intense and complex aroma with a great variety of nuances, harmonically combining the characteristic notes of Amontillados and Olorosos with other citrus notes, reminiscent of bitter orange, and lactic notes, such as fermented butter, gradually becoming round and soft on the palate. It is a dry wine, with the correct grade of acidity and full-bodied, and presents a very elegant and persistent nature on the palate, with a tremendously expressive aftertaste that cannot be easily forgotten.
This wine is aged for 20 years and has an alcohol content of 20º. Ideal for slow tasting, to become immersed in the different nuances and harmonies it presents. It can be used to pair with some nuts, cured cheeses and, at the table, with well-concentrated consommés, stews or gelatinous meats (oxtail, cheeks, etc.). Its structure allows for bottles to be kept open for months.
